Great. It sounds like your on your way!

The “wort” is the actual gallon of liquid you will be fermenting with your starter. The wort will always be different depending on what kind of beverage you want to make.

The general recipe is for 1 gallon.

I was suggesting that you make about 4 cups of the ginger wort (boiling ginger in water for 20 minutes) and adding that to 8 cups your juice preference. That could be 8 cups of pureed strawberries or grape or peach juice. You do not have to do that though. You could simply use 12 cups of juice combines with your starter, lemon juice and agave. I would add some agave to help the wort ferment. It does not have to be a lot if your adding juice. Good luck and let me know how it’s going.

Hi Tamara,

Here is the follow up:
My family loves these drinks! My daughter loves a blueberry soda version. I used your formula and then the flavoring found here: http://www.learningherbs.com/soda_recipe.html and my husband loves the ginger beer recipe you shared. He feels this is a very healing drink and I'm sure it is.

Unfortunately, the agave doesn't seem to work for my system. I've been off all sweeteners except honey and fruit for a 18 months and this was my first try off. Too bad.

I am also experimenting with kefir water. I'm making some for the rest of my family with a sugar or molasses or maple syrup and I'm using "extra" grains to make some all-fruit versions. My family loves the fruit drinks (my daughter is thrilled to be getting "juice"!) My all-fruit versions have been hit-and-miss. I'm learning not to ferment very long. If you have experience with this, I'd love any advice.

Lastly, I just made your green soup for the 3rd time. Thank you. Thank you. This is so good and healthy. I get out of balance from eating too much fruit sometimes and after drinking this soup all my out-of-balance sign go away.
